Lazy Girl French Onion Soup
I love French onion soup, but I don’t love how long it usually takes to make. This is my lazy girl version—simple ingredients, way less time, and still gives me that cozy French onion soup I was craving.
Ingredients and step-by-step preparation
Ingredients
- 5–6 yellow onions, thinly sliced
- 2 tablespoons butter
- 2 tablespoon olive oil
- 1 teaspoon sugar
- 1 tablespoon minced garlic
- 6-8 cups beef broth
- Salt and black pepper, to taste
- French bread or baguette, sliced
- Gruyère, Swiss, or provolone cheese, as needed
Directions
- Cook the onions.
Melt the butter and olive oil in a large pot over medium to medium-high heat. Add the sliced onions and sugar. Cook for about 20-25 minutes, stirring frequently, until the onions are soft and golden. - Add the garlic.
Stir in 1 tablespoon of minced garlic and cook for about 30 seconds, just until fragrant. - Add the broth.
Pour in the beef broth. Add as much broth as you prefer to get the consistency you desire. Stir well, scraping up any browned bits from the bottom of the pot. - Simmer.
Bring the soup to a gentle simmer and cook for 10–15 minutes. Taste and season with salt and black pepper as needed. - Toast the bread - Optional.
While the soup simmers, prepare the bread by cutting into the slices to fit your bowl. You can lightly toast slices of bread, if you desire. - Assemble the soup bowls and add the cheesy topping.
Ladle the soup into oven-safe bowls. Place toasted bread on top and cover generously with your cheese of choice. - Broil.
Broil in the oven for 2–4 minutes, watching closely, until the cheese is melted, bubbly, and lightly browned.
Lazy Girl Tip #1: No oven-safe soup bowls? Add the cheese directly to your bread and broil in the oven the bread with cheese on top. Place the cheesy toast right on top of each bowl before serving.
